Meatless Monday

Yes, I realize that another week has gone by with only a single blog post.  I promise that as soon as winter break hits I'll use that entire month to organize my thoughts and get the ball rolling...I have a notebook dedicated just to blog thoughts, but not enough time to get them started between school, interning, and volunteering.  


I was out of town this weekend and didn't get a chance to make/take pictures of a meatless meal, but I wanted to do this post anyway so I thought i'd share one of my favorite recipes--especially for the chilly fall weather we've been enjoying!


Potato Soup


Ingredients:

  • 5lbs potatoes, peeled and cubed
  • 1/3-1/2 block Velveeta cheese, cubed (depending on how cheesy you like it)
  • 1/4 cup chopped onion (I use dried onion flakes)
  • 1 can cream of mushroom soup
  • salt & pepper
Peel and cube the potatoes and add to large pot.  Add enough water to cover the potatoes, add the onion and bring to a boil until potatoes are soft. 

Add cheese (I do this 3-4 cubes at a time so it doesn't all stick together)

Once cheese is melted, add soup and cover pot.

Turn heat down and allow it to simmer for at least 20 minutes then salt & pepper to taste.

This is by far my favorite potato soup recipe, but its clearly not the healthiest option so we don't make it that often as I can never control myself.
